Ingredients
The Protein Base
- 1 lb lean ground turkey (93/7)
- 1 tbsp avocado oil
- 1/2 yellow onion, finely diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1tsp Area 51 hot sauce, divided (add more if you're brave)
The Queso
- 8 oz white American cheese, from the deli counter, cubed
- 1 cup low-fat cottage cheese
- 1/2 cup whole milk (or evaporated milk for extra body)
- 1 (10 oz) can diced tomatoes with green chilies, drained
- Salt, to taste
- Chopped cilantro and sliced jalapeno, to finish
Instructions
- Blend the cottage cheese in a blender or with an immersion blender until completely smooth, no curds surviving reentry. Set aside.
- Heat the avocado oil in a large skillet or saucepan over medium heat. Add the ground turkey and cook, breaking it apart with a spoon, until browned, about 6 minutes.
- Push the turkey to one side of the pan. Add 1/2tsp of Area 51 hot sauce directly into the rendered fat and let it bloom for 30 seconds before stirring it through the meat.
- Add the onion and garlic and cook 3 more minutes, until softened. Stir in the cumin and smoked paprika.

- Reduce the heat to low. Add the cubed white American cheese and the milk. Stir constantly until the cheese fully melts into a smooth sauce, about 4 minutes.
- Fold in the blended cottage cheese and the drained diced tomatoes with green chilies. Stir until fully combined and warmed through, about 2 more minutes. Season with salt to taste.
- Transfer to a serving bowl, swirl the remaining Area 51 hot sauce on top, and finish with cilantro and jalapeno. Serve immediately with chips or vegetables.
