What You Need

For the citrus rub

  • 3 cod fillets, about 6 oz each

  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • 1 tsp garlic powder
  • Zest of 1 lime

For the cilantro lime crema

  • 1/2 cup plain Greek yogurt
  • 1/2 cup fresh cilantro, packed
  • Juice of 1 lime
  • 1/2 tbsp Lemon Starburst Pineapple hot sauce
  • Pinch of salt

For the slaw

  • 3 cups shredded cabbage, green and purple
  • 1/2 cup chopped fresh cilantro
  • Juice of 1 lime
  • 1/2 tsp salt

To assemble

  • 8 small flour tortillas
  • Extra cilantro for topping
  • Lime wedges
  • Extra Lemon Starburst for drizzling

Step 1: Mix the Citrus Rub

Whisk the hot sauce, olive oil, smoked paprika, salt, garlic powder, and lime zest into a loose paste. Coat the cod fillets on all sides and let them sit for about 15 minutes while you get everything else ready. Blend the Greek yogurt, cilantro, lime juice, hot sauce, and salt until it turns smooth and bright green. Taste it. It should be tangy and herby with just enough heat to notice. Thin it with a splash of water if you want it drizzle-able instead of dollop-able.

Step 4: Toss the Slaw

  • Cod is ideal because it is firm enough to char and flake into big pieces, but mahi mahi, snapper, or halibut all work the same way.
  • Do not skip the 15 minute rest after rubbing the fish. It lets the salt start working and helps the surface dry just enough to take a char.
  • Make the crema and slaw first. Both get better sitting for a few minutes, and the fish takes almost no time.
  • If you want more heat, drizzle extra sauce at the table rather than adding it to the rub. Cooking mellows it; raw sauce hits brighter.
