Coconut Adobo Curry Black Beans: The High-Protein Side That Steals the Plate

Coconut adobo curry black beans plated and ready to serve

Somewhere between a Salvadoran bean pot and a South Indian dal, there is a pan of high-protein curry black beans that has no business tasting this good on a Tuesday. We found it. We are transmitting the coordinates now.

Here is the trick that makes it ours. Most bean recipes treat hot sauce as a last second squirt, a little punctuation on the way to the table. We bloom Scotch Brains Adobo Curry straight into hot oil alongside the onion, garlic, and ginger, the same way a cook blooms whole spices. The curry notes open all the way up, the adobo goes deep and smoky, and about ninety seconds in, your kitchen starts smelling like a side dish that costs eighteen dollars.

Then the second trick: a scoop of red lentils simmered right in with the beans. They dissolve completely and thicken the whole pan into something creamy and glossy, with no cream, no flour, and no cornstarch anywhere near it. They also haul the protein up to 14g per serving, roughly double what a normal bowl of beans brings to the table. Earthly ingredients, cosmic flavors. One pan, thirty five minutes, zero filler.

Why you'll love it

  • 14g of protein per serving, which is a serious amount of signal for a side dish.
  • Zero added sugar. The sweetness comes from onion cooked patiently and a splash of coconut milk, not from a bag.
  • One pan, 35 minutes, and most of that is unattended simmering while you referee homework.
  • Creamy with no dairy at all, because red lentils quietly do the job cream usually takes credit for.
  • Better on day two. Rare for a bean dish, slightly suspicious, definitely true.
  • Goes with every species of dinner. Rice, eggs, tacos, a pork chop, a spoon at 11pm.

Ingredients

For the pan

  • 2 tablespoons avocado oil or olive oil
  • 1 medium yellow onion, finely diced
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 3 tablespoons Scotch Brains Adobo Curry hot sauce, divided
  • 2/3 cup dried red lentils, rinsed
  • Two 15 ounce cans black beans, drained and rinsed
  • 2 cups low sodium vegetable broth
  • 3/4 cup full fat coconut milk
  • 1 teaspoon kosher salt, plus more to taste

For the finish

  • Juice of 1 lime, plus the zest
  • 1/3 cup cilantro, roughly chopped
  • 1/4 cup roasted pepitas

Instructions

1. Rinse the red lentils in a fine mesh strainer until the water runs clear, then set them aside. This is the fussiest step in the whole recipe and it takes ninety seconds.

2. Heat the oil in a 12 inch skillet or a wide saucepan over medium. Add the onion with a pinch of salt and cook, stirring now and then, until it is soft and just starting to color at the edges, about 6 minutes.

3. Add the garlic and ginger and cook for 45 seconds, until the kitchen announces itself.

4. Drop the heat to medium low. Add the cumin, coriander, smoked paprika, and 2 tablespoons of the Scotch Brains Adobo Curry directly into the oil. Stir constantly for 60 to 90 seconds. The sauce will sputter, tighten, and darken a shade. That is the bloom, and that is where this entire dish comes from. Do not skip it and do not walk away from it.

5. Add the rinsed lentils, the drained black beans, the broth, and the salt. Stir, raise the heat, and bring it up to a simmer.

6. Simmer uncovered, stirring every few minutes and scraping the bottom, until the lentils have completely dissolved and the liquid has thickened around the beans, 15 to 18 minutes.

7. Stir in the coconut milk and cook 3 minutes more, until the pan turns glossy. For a creamier texture, mash about a quarter of the beans against the side of the pan with the back of your spoon.

8. Off the heat, stir in the lime juice and the remaining 1 tablespoon of sauce. That raw finishing hit is the second stage of the burn, and it is the one people notice. Taste, adjust the salt, then scatter the cilantro, lime zest, and pepitas over the top.

Chef's notes and make it your own

  • Turn it into dinner. Fold in 1 pound of shredded rotisserie chicken or crisped chorizo during the last 5 minutes and this stops being a side dish and starts being the whole meal, at roughly 35g of protein a plate.
  • Heat dial for smaller earthlings. Bloom only 1 tablespoon of sauce in step 4 and leave the finishing tablespoon on the table for the adults to apply at their own risk.
  • Dried beans work beautifully. Swap in 3 cups of cooked black beans for the two cans, and use their cooking liquid for half the broth. It gets even silkier that way.
  • Lentil rules. Red lentils are the point here because they melt. Yellow split lentils will also work. Brown or green lentils hold their shape and will leave you with soup, so skip those.
  • Meal prep. Four days in the fridge, three months in the freezer. It thickens as it sits, so loosen it with a splash of water when you reheat.
  • Best landing spots. Spoon it under a fried egg, run it alongside grilled meat, or pile it into our citrus-charred fish tacos for a plate that makes taco night look expensive.
